Rice is a precious allied that can save your meal.

It has nothing to envy to pasta and it is always super-delicious.

In Italy it is always eaten as a “primo” (first course) and never as a side.

The most famous way to cook rice is making a risotto.

Risotto alla Parmigiana is the basic recipe, but you can flavour your risotto in so many different ways I’ll never be able to list them all.

But who said you cannot use your risotto as an ingredient? Savarin or timballo can be so gourmand!

You can also find some basmati rice recipes, even if this is not traditionally Italian.
